Spring Cleaning for the Impatient (Some Non-Vegan Recipes/Ingredients)
...means new recipes! Before winter I stock up on pantry items, sometimes things like citron and coconut cream. Winter is over, spring is almost over, so many pantry and freezer items must go!
Coconut Cream Cookies
1 egg
1/2 cup sugar
8.5 ounce can coconut cream
1 1/4 cup flour
1/4 tsp baking soda
3/4 tsp baking powder
1/4 tsp salt
1/2 cup chopped pistachios
4 oz citron
Combine egg and sugar well, add coconut cream and salt, combine well.
Add flour, baking soda, baking powder, stir until almost completely combined.
Add citron and pistachios, stir well.
Doesn't spread a lot, so leave about an inch between cookies.
350 for 13-17 minutes, they should be a rich golden brown.
Makes 2-3 dozen.
Coconut Corn Chowder
oil
small diced onion
1/2 cup diced ham
1/4 tsp hatch
1/4-1/2 tsp salt
1/2 tsp dried garlic (or whole clove, smashed, sliced or diced)
2 cups corn (frozen or fresh)
2 tsp flour
13.5 ounce can coconut milk
3/4 cup water
Sweat the onion until transparent, then add ham until heated.
Add salt (do not add all the salt at the same time, taste frequently to see how much salt you want), pepper, garlic to bloom.
Drop to simmer.
Add corn until heated through, then add flour and mix thoroughly for about a minute.
Add coconut milk, heat through, add water, and stir well.
Simmer for 30 minutes, stirring every 5 minutes to prevent burning bottom.
Makes 2 as a main meal, 4-8 as a side, depending on amount of side.
Garam Masala
1 tablespoon dried small rosebuds, stem and green removed
1-inch piece of cinnamon stick, broken into pieces
2 bay leaves
1 1/2 tbsp ground cumin or 2 tbsp seeds
2 tbsp ground coriander or 2 1/2 tbsp whole
1/2 tbsp ground green cardamom or 1 tbsp whole
1/2 tbsp cracked black pepper or 1 tbsp whole
1 1/2 tsp whole cloves or 1 tsp ground
1 dried red chile or 1 tsp dried
1/4 teaspoon grated nutmeg
1/8 teaspoon ground mace
In a dry pan, lightly toast the whole items, stirring to prevent burning.
Their aroma will strength will let you know when the heat has done it's job.
Throw everything into a coffee/spice grinder or mortar and pestle and grind together.
Makes between 1/2-3/4 cup mix.
Cinnamon Roll Icing
2 ounces cream cheese (about 2 1/2 tbsp can be slightly more or less, to taste)
3 tbsp butter
1/2 tsp vanilla
1 tbsp milk
1 cup powdered sugar
Mash butter well, then mash cream cheese with it, mash in vanilla, mash in milk, incorporate powdered sugar.
Pour and spread over just-out-of-the-oven cinnamon rolls.
Vegan Banana Bread
5 mushy bananas
2 tbsp ground flax seed
2 tsp vanilla
2 tsp lemon juice
1 cup brown sugar
1 3/4 cup flour
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
350- 45 minutes in a greased glass pan.
Blueberry Muffins
1 1/2 cup flour
2 tsp baking powder
1/4 tsp salt
1 tsp ginger
1 egg
1/2 cup sugar
1/2 cup milk
1/4 cup oil
1 tsp vanilla
3/4 cup blueberry
Preheat to 400.
Mix dry.
Mix wet and sugar in separate bowl.
Add dry to wet, mix half way.
Add blueberries.
Fold, but leave some dry clumps.
Bake about 20 minutes, turning half-way through
Will be golden and toothpick comes out clean.
*These are not overly sweet, may want to use dried blueberries for stronger flavour.
