Impatient Lagniappe (Some Non-Vegan Recipes/Ingredients)
BLT Chicken salad
1 can of chicken
2 ounces cream cheese (about 3 tbsp)
2 tbsp ranch dressing
3-5 tbsp cooked bacon bits
diced tomato 1-3, depending on size beefsteak vs roma
2 pickle wedges, diced
Combine completely. Good on sandwiches and crackers.
Mincemeat Granola Bars
hydrate 9 ounce package of mincemeat in 3/4 cup boiled water
chop it up as well as you can during the half hour it re-hydrates
in a bowl combine:
3/4 cup chopped favorite nuts
1 1/2 cup oats
1/2 cup flax seed meal
and mincemeat in juice
mix all together
Press down well into a greased 8 x 8 glass pan.
Bake in preheated 375 oven for 30 minutes.
Let cool completely, can use fridge to assist.
Cut into 9-12 squares.
Bread Dipping Seasoning
3 tbsp parsley
2 tbsp finely chopped basil
2 tbsp finely chopped rosemary (1 tbsp powdered thyme instead)
2 tbsp dried oregano
2 tbsp granulated garlic
2 teaspoon salt
1 teaspoon freshly ground black pepper
1 teaspoon crushed red pepper flakes
Lemoncello
1 750 bottle smooth vodka
11 large lemon rinds, no pith
2 1/2 cup sugar
3 1/2 cups water
Allow rinds to soak in vodka at room temperature, covered for 5 days, at minimum.
(I only bought 5 lemons at first, so 2 days later I bought 6 more lemons and added to the concoction(Friday-Saturday).
On the eighth day (Friday), I brought the water to boil and dissolved the sugar in it. Allowed it to cool completely that day at room temperature. Add syrup.
-It was too sweet and not enough lemon, so I added 5 more lemon rinds after straining mixture.-
Then I allowed this mixture to sit for 30 days.
Strained into clear bottles. Put the liquored up sugar peels in food dehydrator.
Mixture sat for another 3 months before being served.
Try to serve chilled
