Spring Cleaning for the Impatient (Some Non-Vegan Recipes/Ingredients)

...means new recipes! Before winter I stock up on pantry items, sometimes things like citron and coconut cream. Winter is over, spring is almost over, so many pantry and freezer items must go! Coconut Cream Cookies 1 egg 1/2 cup sugar 8.5 ounce can coconut cream 1 1/4 cup flour 1/4 tsp baking soda 3/4 tsp baking powder 1/4 tsp salt 1/2 cup chopped pistachios 4 oz citron Combine egg and sugar well, add coconut cream and salt, combine well. Add flour, baking soda, baking powder, stir until almost completely combined. Add citron and pistachios, stir well. Doesn't spread a lot, so leave about an inch between cookies. 350 for 13-17 minutes, they should be a rich golden brown. Makes 2-3 dozen. Impatient for Freezer Meal-Making

Meals are being made and I just keep freezing the left overs. Spinach and Artichoke Casserole This was good split between the two of us on a hungry day, but would also make a great side for maybe 8 spoonfuls. Grease a pie plate and add the mixed combination of: 2 handfuls cut spinach 6.5 ounce jar marinated artichokes drained and minced 1 cup rehydrated, slightly seasoned (broth), broken into smaller pieces soy curls 2 cups crushed tortilla chips 2 mushrooms, minced 2 green onion stalks, sliced 1 cup bechamel (oil, flour, nutritional yeast, almond milk, salt, pepper, garlic) Bake about 350f for 45 minutes, or until browned, or bubbly. The Hotdogs I steam in parchment and foil wrappers. These might do good on a grill or a stick over fire but I have not tried it. I fry it in a pan to give it crispy edges all around. Sweet Potato, Carrot, and Red Lentils Baked a sweet potato and carrot, sliced, oiled and salt and peppered for about 40 minutes at 350f. While those were going, cooked red lentils in twice their water, simmered for 20 minutes, drained and rinsed, then cooked with garlic, onion, paprika, butter, red pepper flakes, and broth until reduced and thickened.
