Impatient Apple Pie or Tart, and more!

Technically these are pies, since I closed the pastry around the filling, but tarts would be just as fine! 1 cup chopped walnuts 2 cups shredded apples (about 3) 1/2 tsp cinammon 1 tsp lemon buttery, flaky pie crust muffin pan Mix all well, spoon a good heaping 2 tablespoons in each mini, piecrust-lined cup. Bake at 350 df for 35 or so minutes- just til they think about turning golden. Makes 6-8 depending on size. Be warned-these are not too sweet at all, if you wish it, drizzle a teaspoon of honey or agave on top or add a quarter cup of sugar or sweetener to the mix! Using mini muffin pan, you can make finger pasties of spinach: Cook 2 cups spinach with 4 oz silken tofu, 2 ounces diced cheese, 1/2 teaspoon salt, and 1/4 tsp of a few seasonings you like such as coriander, garlic, parsley, pepper, and turmeric. Spoon about 1 teaspoon in each mini crust-lined cup. You may want to add more to the top to fill it out such as crushed nuts or perhaps egg mixed with anoth

Modern Gyngerbrede for the Impatient (Some Non-Vegan Recipes/Ingredients)

Add 1/4 cup packed brown sugar, 1/4 cup agave, 1/8 cup water, 1/2 tsp vanilla, 1 egg. Mix completely. 350 df for 15-17 minutes (soft-hard). Makes a dozen. * The traditional version used cooked bread crumbs, no egg, double the sweetner (and all honey not agave and brown sugar), no baking powder, more cinnamon than ginger, pepper instead of cloves, no water, no butter, no vanilla, and saffron/cinnamon/sandalwood for colour.
