Impatient Pantry of Another

So, after 2 hotels, and a rental, we are now in our final rental while the new home is being built. It is our neighbor's house, she went to go live with her daughter, allowing us to rent her pace, keep it clean, show it to potential home buyers, and left us with  supplies including food. The food was a bunch of alternative flours (sorghum, almond, coconut, fax, wheat, white, corn, and brown rice), nuts (pecan, hazelnut, almond, pine, and walnut), grains (barley, quinoa, oats, Irish oats, wheat berries), and miscellaneous other things like all the spices and herbs, 64 oz bag of frozen strawberries, amigos, apple cider vinegar, agave, molasses, honey, sugar, pumpkin, evaporated milk, kefir, teas, onions, few frozen veggies, a vat of coconut oil, and a handful of other things. Just made a vegan lemon pound cake to go with the strawberries. Did two batches of naan with the kefir. Fruit and nut energy bars with chocolate on top. Chili, brownies. Fire is Impatient

So, our house caught on fire. Stayed at a hotel for a couple nights on borrowed cash-not even a microwave or minifridge in room. Insurance moved us to a kitchenette hotel room for a week and a half, but only used the microwave once, and stove top once. Then insurance moved us to a rental house, pre-furnished. Pantry items Strawberries, banana, apples, lettuce, bell peppers, tomatoes, mushroom, broccoli, corn, peas, potatoes, refried beans, beans, fish, panko, cocoa, flour, sugar, milk, butter, cheese, sour cream, dill, salt, pepper, cumin, paprika, garlic, onion, grapeseed oil, Italian seasoning mix, chocolate chips, baking soda, baking powder, crisco, walnuts, yeast, tortillas, bread, pasta, v-8, cranberry juice, crackers, eggs, cereal, yogurt, canned tuna, chicken sausage, angel food loaf. Impatient Lagniappe (Some Non-Vegan Recipes/Ingredients)

BLT Chicken salad 1 can of chicken 2 ounces cream cheese (about 3 tbsp) 2 tbsp ranch dressing 3-5 tbsp cooked bacon bits diced tomato 1-3, depending on size beefsteak vs roma 2 pickle wedges, diced Combine completely. Good on sandwiches and crackers. Mincemeat Granola Bars hydrate 9 ounce package of mincemeat in 3/4 cup boiled water chop it up as well as you can during the half hour it re-hydrates in a bowl combine: 3/4 cup chopped favorite nuts 1 1/2 cup oats 1/2 cup flax seed meal and mincemeat in juice mix all together Press down well into a greased 8 x 8 glass pan. Bake in preheated 375 oven for 30 minutes. Let cool completely, can use fridge to assist. Cut into 9-12 squares. Spring Cleaning for the Impatient (Some Non-Vegan Recipes/Ingredients)

...means new recipes! Before winter I stock up on pantry items, sometimes things like citron and coconut cream. Winter is over, spring is almost over, so many pantry and freezer items must go! Coconut Cream Cookies 1 egg 1/2 cup sugar 8.5 ounce can coconut cream 1 1/4 cup flour 1/4 tsp baking soda 3/4 tsp baking powder 1/4 tsp salt 1/2 cup chopped pistachios 4 oz citron Combine egg and sugar well, add coconut cream and salt, combine well. Add flour, baking soda, baking powder, stir until almost completely combined. Add citron and pistachios, stir well. Doesn't spread a lot, so leave about an inch between cookies. 350 for 13-17 minutes, they should be a rich golden brown. Makes 2-3 dozen. Impatient Training and Reboot

Husband decided that he wanted to learn to cook (without having to follow silly recipes). The first weekend was a basic yeast bread. Second was a jewelled, vegan rice (tvp, rice, seasoning, pistacchios, broth, dried apricots, raisins, onion, tomato, red bell pepper). Third, I ended up with strep throat, but had pulled out a pork roast to thaw-gave him written directions how to use the dutch oven with coal for the piece of meat- how to preheat, etc, outside. Pulled out seasonings for him to use his own judgement on so he can gauge seasoning use. Everything has come out pretty perfect! Never having had strep before, it has been/is still an interesting thing to go through. The first day I just thought it was monthly issues, then 3 am I began throwing up. By the second days' evening, my throat was sore and swollen, I pretty much figured I would die before my 21 year old cat. Breadily Impatient (Some Non-Vegan Recipes/Ingredients)

Bread is all so similar, just slight differences for the different textures. These are my current favorites. Dinner rolls Mix a cup of flour with 1-3 Tbsp sugar, 1/2 tsp salt, and 2 1/4 tsp yeast. Heat up 2-3 Tbsp of butter or shortening in 1/4 cup water, and 1/2 cup milk (yes, even almond milk)-hot enough so you an stick a finger in, but not scream "ouch". Mix these together completely, add 1/2 cup more flour, mix thoroughly, add another 1/2 cup flour, mix well, another 1/2 cup and mix. Then flour a board and dump dough out, using 1/4-1/2 cup flour while kneading dough for about 5 minutes. Cover dough and let it it for 15 minutes. Cut into 12 pieces, make into dough balls. Place in greased cake pan, allow to sit with no draft for 40-60 minutes. Bake at 375 for 20 minutes. Brush 2-3 Tbsp melted butter or margarine over top.
