Spring Cleaning for the Impatient (Some Non-Vegan Recipes/Ingredients)

...means new recipes! Before winter I stock up on pantry items, sometimes things like citron and coconut cream. Winter is over, spring is almost over, so many pantry and freezer items must go! Coconut Cream Cookies 1 egg 1/2 cup sugar 8.5 ounce can coconut cream 1 1/4 cup flour 1/4 tsp baking soda 3/4 tsp baking powder 1/4 tsp salt 1/2 cup chopped pistachios 4 oz citron Combine egg and sugar well, add coconut cream and salt, combine well. Add flour, baking soda, baking powder, stir until almost completely combined. Add citron and pistachios, stir well. Doesn't spread a lot, so leave about an inch between cookies. 350 for 13-17 minutes, they should be a rich golden brown. Makes 2-3 dozen.
