Impatient Ziti Casserole and Jambalaya

Sautee minced onion, grape tomato, and 2 tsp garlic, split this between the casserole and rice dish. Ziti Casserole In a bowl, combine package of soft tofu tube of soyrizo 1/2 tsp salt, 1/4 tsp pepper half package par-cooked ziti 1 tsp oregano Stir very well, pour into greased glass pan, cover with foil. Cook about 400 for 25-30 minutes. LET REST before cutting. It needs to set. The Jambalaya was just pre-cooked jasmine rice, onion, tomato, veg sausage, veg burger, paprika, heated through in a large pan with some added veg broth.

Impatient January 1, 2018, Holiday Nibbles (mostly sweet)

Holiday  Nibbles 1. German Chocolate Cookies Mix wet first: 1/4 cup oil 1 flax egg 1 tsp vanilla 1/4 cup packed brown sugar Then add: 1/4 tsp salt 1/4 tp baking soda 1/4 cup cocoa 1/4 cup chopped pecans 1/4 cup sliced coconut 1/4 cup chocolate pieces 1 cup flour Bake 375f for 11 minutes, makes 1 dozen. Impatient Vegan Thanksgiving

Started out by making some  breakfast muffins  (cherry and sprinkles for me, orange and cranberry for him). The base muffin: 1 cup flour 1/2 cup sugar 2 tsp baking powder 1/4 tsp salt 1 banana  enough veg milk to make it into a batter (between 1/4-1/3 cup) 1/4 cup additions 400f for 20 minutes. Makes six.  Second up was the seasoned potato skins . Seasoned up the potato skins (from the potatoes to be mash), and baked them about 375f for 20 minutes. Third, the rainbow bread rolls. Just standard yeast, flour, yeast sweetener, water, salt. After first rise, I divided dough out, added color drops and rolled them all up onto a tray to rise before baking. Fourth was this gem of a pumpkin pie courtesy of Anarchist Kitchen. I tried the low calorie version. Made it day of, threw in fridge for an hour and then in freezer for a tiny bit instead of chilling it the right way. It was basically pumpkin pudding. Really good, didn't have a ready made sp

Impatient Wheat Pizza Dough

The fridge is still in limbo. It was broke since we received it, the company has sent a guy out to repair it several times. It went from not cooling in the refrigerated area, to now freezing just like the freezer. This has been going on since March, lovely. So certain things I used to keep in the fridge, I had to switch out. Today is pizza, individual packets of yeast since I cannot keep a large bottle of yeast atm. In a large bowl place yeast, honey or sweetener on top of yeast 1 cup wheat flour on top of honey 1 cup of water that was heated for 31 seconds in microwave (warm like baby milk) Stirred this up, added 2 more cups wheat four and 1 tsp of salt Stirred well and placed into a microwave or other covered area, over night. In the morning, II kneaded it just to get it mixed and conditioned. Poured a TBSP or so of oil on ball, spun the dough around to get coated by oil. Letting it sit until about an hour before baking. Impatient to have things Work!

So we moved into this house about March, about 6 months ago. Bought all new appliances. Microwave was wrong kind, got replaced. Refrigerator has been broke entire time (first the refrigerator part wouldn't go cooler than 65f, now it won't go above 20, after about 11 visits it looks like they may finally replace the whole thing). Also no recipes this week because I managed to sprain or tear Achilles tendon. Been trying to stay in bed off feet, aside for needing restroom and food; but haven't been cooking this week, apologies! So I been trying to keep shelf stable items in pantry, and still eating stuff out of freezer so we will eventually have less foods to move to knew fridge. Received a book for my birthday: the Homemade vegan pantry Veg dogs made with vital wheat gluten. Enough info in this book that I foresee making lunch meat out of marinated seitan. Very excited.

Impatient Eggplant and Cabbage

I baked some pieces and fried some pieces. Sliced eggplant into discs after removing skin. Then sprinkled salt on them and let them sit a half hour or so. Finally blotted moisture off before egg dipping and bread coating. Marinade/Egg Dip 2 tbsp soy amino 1/2 tsp pepper 3 tbsp nutritional yeast flakes 1-2 tbsp water Bread Crumbs  (there was extra, and didn't get wet clumps, so saving it for tofu breading) 1/3 panko 2/3 regular bread crumbs 2 tsp paprika 1 tsp marjoram 1/2 tsp powdered onion 1/2 tsp powdered garlic 1/2 tsp salt 1/4 tsp cayenne 1/4 tsp black pepper The pieces minced and baked in oven after marinade went on to toasted bread with sliced and toasted tomatoes, like a bruschetta. The shallow fried discs went onto sandwiches with tomatoes, lettuce, avocado salsa/mayo. To start off Bday weekend, making fixings for Burritos and Nachos Bean Dip/Filler 1 1/2 cups/10 oz/285 gr cooked pinto beans 1/4 cup/12.7 oz/50 gr bean cooking juice 1/2 tsp: garlic onion powder cumin salt amino (salt) 1/4 tsp: black pepper cayenne/hatch 1 tbsp butter or oil/ alternative Smash it up good, stir well, heat before serving. White Bean Burgers 1 1/2 cups cooked white beans 1/2 cup walnuts 1/2 cup seasoned bread crumbs * 1 tsp salt 1 tbsp oil 1 tbsp amino soy *The bread crumbs were left over seasoning from a chicken-flavored tofu crumb coating- smoked paprika, parsley, marjoram, onion, pepper, garlic. 1. All ingredients put in a food processor, in order, and combined on low. 2. Made 5 burgers, cooked in a pan with some oil.

Impatient Quick Breads (Banana Bread)

Basic Quick Bread 1 3/4 cup flour 1 cup sugar 1/4 tsp salt 1 tbsp baking powder 2 tsp lemon juice (or a vinegar) 1 cup diced zucchini 1 cup walnuts, broken Makes loaf, 6 large muffins, or 3 mini-loaves. Before baking my recent batch, I also dotted the top with walnut pieces. Bake at 375 (30 minutes for loaf, 20-25 minutes for muffins, 10-15 minutes for smaller muffins). Other than this, just been making more breaded, and fried tofu tacos, homemade baked beans; attempted chocolate earthquakes, but they were better with ice cream than alone. Making cinnamon rolls today but the dough is tough, so it may not work- sometimes if food isn't given enough undivided attention, it manages to tell you.

Impatiently Forgetting to Post (Pot Pie, Parm Cheez, and Salsa)

The Pot Pie Make your favorite biscuit recipe, sautee some veggies, add some cooked beans, make a white sauce, place everyone in an oven-safe baking pan, place as many cut out biscuits as there are servings, on top. Bake how your biscuits want to be baked, something like 400F for 25 minutes. My cream sauce was made with oil, flour, seasoning, almond milk. Veggies were onions, peas and carrots, mushrooms, black beans, and tomato. Biscuits were flour, crisco, almond milk, vinegar, baking powder, baking soda, sugar, salt. The Vegan Parm-flavor Crumbles 90 grams salted cashew pieces (about 3 tbsp) 9 grams nutritional yeast (about 1 tbsp) Grind in coffee grinder. They amazingly taste like parm cheese, great in salads, on pasta, on bread sticks, pizza crust... ...adding this to an apple pie crumble top would be reminiscent of the cheddar slice on apple pie known in some areas. Impatiently Pan Glop (Curry)

Kind of a Curry , 3-4 servings Little oil in a pan, throw in 3 diced Roma tomatoes , a small diced cooked potato , and a zucchini cut in long strips. Let it sweat with some curry seasonings (cumin, turmeric, garlic, onion, pepper, salt, paprika, coriander), then if it gets dry add some water. Add about a 1/2 cup of cooked brown rice , and 1/2-1 cup of cooked lentils . This should all take about 20 minutes Let it all sit together, lid on, heat turned off another 20 minutes. If one appreciates sour cream, yogurt, or creme fresh, a dollop on top might be really good when serving this piping hot. ***As soon as I remember to pull pictures off phone, I will include whatever I can on the previous posts.

Impatient Dessert Mugs

Thought I may have posted a very long time ago on these but a search turned up a no. Mug Cake Base 1/4 cup flour 1/4 tsp baking powder 1/8 tsp baking soda 1/8 tsp salt 2 1/2 tbsp sugar 1 tbsp oil 1 tbsp "milk" *vanilla optional, squirt *if too dry, use more milk Microwave minute and twenty seconds to thirty seconds (1:20). Banana Bread : 1/2 tsp nutmeg 1/2 small banana or 1/4 large banana Carrot Cake : 1/2 tsp cinnamon 1/3 cup minced, cooked carrots Chocolate : 2 tbsp cocoa I haven't tried the Peanut Butter yet, but it'll be 1 tbsp when I do. Dried and fresh fruit , also haven't bothered with, but 1 1/2-2 tbsp You may even consider adding pudding mixes for your flavor, about 3 tbsp , think Pistachio , or Butterscotch; and consider adding a tsp of candy chips, like mint chocolate, white chocolate, carob, peanut butter! Impatient for Winter! Food and Crafting Ideas I will work on this year)

Getting a tree this year, will have a party to decorate it. Food, drink, movies, games, snacks. So this year our local Luminaries event at the local state park will have hot cider and Mexican cookies, and they will be collecting toys for tots. So this is when I would hope to have company over because we can do stuff during the day, then pop over there, then head home-full and joy-filled. Hot Cocoa From the first book: Homemade Hot Cocoa 1 cup dried milk 1/4 cup cocoa 1/4 cup sugar 1/4 cup creamer 3 cups hot water Stir dry ingredients together well. Add to hot water. Makes about 4 servings. This can be used to make cold chocolate milk too, use 2 tablespoons of water to make syrup then blend in the rest of the water. Hum

Simple Impatience is Sometimes the Easiest (Pancakes)

The standard pancake/waffle mix of mine works fine, just exchanged the milk for almond juice, and deleted the eggs. I used to insist on nutmeg, allspice, or cinnamon, along with applesauce or bananas. No more, just too unreliable and usually gummy around guests. So for about 4-8 pancakes, depending on size, it is just 1 cup flour 1 tbsp baking powder 1-3 tbsp sugar 1/4-1/2 tsp salt 3/4 cup almond milk/juice I used to make these with whole wheat flour, also, still fluffy, just don't weight it down with oil, applesauce, or smashed banana- no need! Local store didn't have whole wheat, hopefully next week! Also ordered a 5 lb package of vegan "shwarma meat".  Had it on homemade naan this weekend, then put it on rice for spouse lunch, then added some to homemade goulash (tomato, carrot, onion, garlic, red bell pepper, salt, pepper, paprika, broth, fat elbow pasta. Impatient to Clean the Freezer Out Before Fall (Vegan Muffins, Vegan Shwarma meat, Goulash, Stuffed Mushrooms, Black Bean Burgers)

7/26 Muffins 1 1/2 cups frozen cherries (second time was strawberries) 2 2/3 cups flour (*-1/3) 2 tsp baking soda 1 tsp salt 1 cup sugar (*- 3 tbsp) 1/2 cup oil (I may try to reduce this to 1/4 cup) (*use only 1/3 cup oil) 1 cup almond milk 1 tsp vanilla 2 tsp apple cider vinegar 350 F for about 35 minutes, or until golden. I got 15 muffins out of my batch. (Still made 16 even with reducing flour, sugar, and oil) ** These seem highly unstable depending on humidity. I live in the desert but it rained last night and batter was way too wet, added more flour this third time. *Also sprinkled half with the coarse sugar on top. Have to make about 5 more batches to finish off fruit in freezer, freeze for tea. 7/27 Black Bean Burgers Smashed and mixed 1/2 cup black beans with 1/3 cup tvp that had been rehydrated with 2/3 cup broth 1/2 cup of bread crumbs Made 3, 1/2 cup serving burgers. Impatient Fried Tofu Nuggets, French Toast, Tandoori. Tofu Tofu Tofu

Tofu Nuggets Tofu (extra firm, drained, cut into about 15 nuggets, dividing the bar into 3 slabs) 3 tbsp flour 1 tbsp nutritional yeast 8 tbsp water 1 cup bread crumbs Chicken Seasoning Blend 1 1/2 tsp smoked paprika 1 1/2 tsp garlic 1 1/2 tsp salt 1/4 tsp cayenne pepper 1/4 tsp black pepper 1/2 tsp sage Mix up seasoning and put half in the crumbs, and half in the wet batter. Coat nuggets in batter, then in bread crumbs, then shallow fry until very dark, 5-7 minutes each side. These were good, but definitely make them smaller than you think you want, because the smaller, the better, the breading is all the flavor. Fried Fish Tacos Spouse thought it was amazingly like fried fish in our tacos. So when I do try to make them like fried fish, I will replace the sage with dill, and probably -1/2 tsp of the smoked paprika, too. Impatient Parmesan

Vegan Parmesan Cheeze So, something that tasted like parmesan cheese was needed. People are using nuts, seasoning, and nutritional yeast. I used salted cashew pieces and nutritional yeast. Placed my coffee grinder lid o the scale, threw in a couple small handfuls of nuts and a couple spoons of nutritional yeast. It still made more than what the little container could hold, so next time I will half the recipe to this: Grind in coffee grinder: 45 grams of salted cashew pieces + 4.5 grams nutritional yeast. I also plan to add garlic, parsley, and oil to make a spread when  doing garlic bread, bruschetta, or stuffing into ravioli.
